Spatchy Chicken and sliced crispy taters

Cranked up the Mini-WSM with 365 Lump, cherry wood. I took out the clay diffuser and poured on the heat


Look at that nice TBS!!!


Seasoned with chipotle powder, garlic, Smoked Serrano Salt, and CBP.


Golden brown Crispy skin delight!


Devil Bird!!!


Slice the taters about 3/4 of the way through. Coat inside and out with EVOO, Smoked Serrano Salt, CBP.


Onto the gasser @ 450* for 45mins-one hour.


Crispy skin taters!!

Grilled Poppers!!!


The star appetizer ready for the grill. Some stuffed with pulled pork some not. Vegetarian guests th_dunno-1[1].gif Some Jalapenos, some sweet baby peppers. Stuffing is whipped cream cheese, queso fresco, smoked cheddar, smoked pepper jack, garden fresh chives, fresh garlic, chipotle powder, and dusted with paprika. The fillings for these can be just about anything you like. Albacore tuna is a great topping. Wrap them with thin sliced bacon and you have an ABT (Atomic Buffalo Turd)

Grilled Tri-tip!

The last couple days I took a break from the Mini-WSM and have been using the gas grill that I have been neglecting the last year or so! I bought another bulk pack of tri-tip from our local wholesaler and one of the tips was small so I felt it would be great grilled. We also had a head of cauliflower that I needed to use up so I threw that into a foil pan with some smokerd serrano salt, cumin, pepper EVOO. We reheated a couple twice baked hatch chile taters too.

Grilled Burgers, Smoked Serrano salt, Basil Corn and Crispy skin taters



Feeling bad for the gas grill I fired her up last night and cooked everything on it. We did use smoked pepper jack on the patties. The corn is coated with butter, fresh boxwood basil, and smoked serrano salt. Wrapped in foil and onto the grill. The taters were covered in EVOO pepper and smoked serrano salt, direct grilled.

Dutch Oven Bread

Wanted some bread to go with some smoked cheese and a basalmic reduction so I thought I'd make some crusty DO bread.

Its a very simple 4 ingredient recipe:
 
3c unbleached all-purpose flour
1t yeast
1t salt
1-1/2c warm water
Instructions
In a large mixing bowl, whisk together flour, salt and yeast. Add water and stir until a shaggy mixture forms (mixture will be loose and sticky; this is what you want).
Cover bowl with plastic wrap and set aside for 12 - 18 hours (up to 24). Overnight works great.
Preheat oven to 450. Place a cast iron dutch oven with a lid in the oven and heat the pot for 30 minutes.
Meanwhile, pour the risen dough onto a heavily floured surface (mixture will be sticky) and lightly shape into a round loaf.
Remove hot pot from the oven and carefully set in the dough. Cover and return to oven for 30 minutes.
Then, remove the lid and bake an additional 10-15 minutes.
Carefully remove bread from oven and from pot and place on a cooling rack.


Dough all mixed up, cover and let rest 12-18 hrs (if in a hurry 5-6 hrs works too)


After letting it rise (it tripled in size) turn it out onto a well floured surface, use well floured hands too. Do not punch down or knead!

Place into DO. If you turn out onto parchment paper, place paper and dough into DO.



All done!! Yumm!

Grilled Turkey Burgers

Fired up the gas grill last night. Put a small load of apple pellets in the 12" AMNTS. Mixed boxwood basil and fresh chives from our garden into the ground turkey and made patties. Meant to mix in some feta cheese but I forgot icon_eek.gif That would have been awesome! Sliced some taters and seasoned with smoked Serrano salt, boxwood basil, chives and black pepper, a few slices of butter wrapped in foil and onto the grill. Also grilled an ear of white corn in the husk.





Forgot about the grilled onions!

Cherry wood smoked reverse seared smoked pepper jack cheese burgers and wasabi mayonaise smoked egg tater salad

My now 7 year old sporting his birthday apron!!! He requested cheese burgers and tater salad for his B-day dinner.
Instead of plain mayo and mustard we used Trader Joes "Wasabi Mayo". OMG, Awesome!!!


Smoked the eggs using the 12" AMNTS in the Mini-WSM for 1.5 hours. Apple wood pellets


Kingsford Blue with a chunk of cherry. SPOG on the burgers.


Ran them in the smoker for about 40 mins. Then seared them off and loaded them with cheese.
